You see the unchanged state of a floppy because you did not command to save the changes. Mind that all but formatting activity is first buffered by the application and stored to the floppy only upon an explicit request, Disk → Save. Changes that are only buffered but not stored will be lost once the access to the floppy is closed (before disposing the changes, you will be asked to save them, as you would with a usual image).
